Chautauqua Institution Pastry Chef (Athenaeum Hotel Kitchen)/Seasonal Employment in Chautauqua, New York

Description

The Athenaeum Hotel Kitchen supports culinary services for all ten of the Chautauqua Hotel Company food service operations. The culinary experience is managed by Executive Chef Carrie Gifford. During the nine-week summer season the kitchen operates daily from 5:30 a.m. to 11:00 p.m.

About Your Compensation

Compensation for this position starts at $25.00/Hour and, with demonstrated experience and qualifications, candidates may earn up to $30.00/Hour.

About Your Work Day

  • Creating and preparing Garde-Manger and pastry food service prior to dining service with the consultation of the Executive Chef to determine what will go well with menu items.

  • Plate items as requested during meals and suggest pairing desserts with wines, cocktails, and other dessert beverages.

  • Supervise and train culinary staff on Garde-Manger and pastry food service.to ensure they follow specific techniques, in addition to assisting with the preparation of food items.

  • Responsible for researching and developing recipes including learning and testing new recipes to keep the menu up-to-date and interesting

  • Practice techniques to ensure all food items are visually appealing to encourage diners to order.

  • Submit food and supplies orders with associated costs for approval to Executive Chef.

  • Work in a team environment with a high degree of professionalism while handling multiple priorities to produce efficient service.

  • All other duties as assigned.

About the Referral Program

Chautauqua Institution will provide a $500 referral bonus (less taxes) for active employees referring a new candidate who is hired and remains employed for at least 90-days from the first physical date of work. In the case of seasonal positions working less than 6-months, the new candidate must remain actively employed for at least 30-days from the first physical date of work and until the closing date of the season. The closing date of the season is the last Sunday in August.

About Your Schedule

Chautauqua Institution and Chautauqua Hotel Company offer flexible schedules, full and part-time, for seasonal employment during summer operations starting annually each June and concluding in August. Seasonal employment may be available earlier (pre-season) and beyond season (post-season) based on business needs and candidate availability. Schedules typically include evenings, weekends, and/or holidays as a requirement.

While you will confirm your final schedule with management at the time of an interview and offer of employment, you should generally anticipate the following schedule options for this position:

Typically work an eight-hour shift with a start time that varies between 5am to 5pm.

Housing is not an option for many positions and may be of a cost to you.
