Position Overview: The Breakfast Baker for the AM shift plays a critical role in our kitchen operations by preparing high-quality pastry products according to the Hyatt's pastry shop standards. This early morning position is ideal for a meticulous and passionate baker who thrives in the quiet hours of the morning to create exceptional baked goods that delight our guests.

Key Responsibilities:

  • Prepare and bake a variety of breakfast pastries, breads, and other baked goods for Tahoe Provisions, Events, LEG Brunch, and the Daily Breakfast Buffet, according to established recipes and standards.

  • Ensure all baked goods are prepared and presented in a timely manner to meet breakfast service schedules.

  • Maintain a clean and organized work area, following all food safety and sanitation guidelines.

  • Collaborate with other kitchen staff to ensure a smooth and efficient breakfast service.

  • Assist senior bakers and the Pastry Chef with the preparation and design of all pastry products.

  • Monitor inventory levels and assist in ordering and receiving bakery supplies.

  • Adhere to hygiene and cleanliness standards, maintaining a clean workstation at all times.

  • Report directly to the Pastry Chef, aiding in the implementation of new recipes and menu items.

  • Handle the unique pace of morning operations, ensuring timely delivery of all baked goods.

  • Provide excellent customer service, addressing guest needs and special requests.

Qualifications:

  • roven baking experience, particularly in a high-volume, fine dining environment.

  • Familiarity with professional kitchen equipment, including mixers, ovens, and dough sheeters.

  • Strong understanding of food safety and sanitation practices.

  • Excellent time management skills, with the ability to start early morning shifts.

  • Ability to work early morning 3 am shifts, weekends, and holidays.

  • Previous experience as a baker or in a similar role in a hotel or high-volume restaurant.

  • Strong knowledge of baking techniques and ingredients.

  • Ability to follow recipes and instructions accurately.

  • Culinary arts degree or certification in baking and pastry-making preferred.

  • Strong attention to detail and commitment to quality.

  • Good communication and teamwork skills.
