JOB REQUIREMENTS: Job Summary: The Memorial Union is looking for a full time Sous Chef to join our culinary team. This position will report to the Associate Executive Chef and will oversee all second shift kitchen production. Duties include ordering and receiving product, menu planning, food preparation, supervising and training staff, and overseeing the dish room. This position will also monitor adherence to local and state food safety guidelines and field any questions from our guests or service staff. Our culinary team runs a multi-department, fast-paced kitchen where you will be expected to problem solve, prioritize tasks, and maintain food quality while meeting production demands. The successful person in this role will be self-motivated, be able to work independently, be comfortable giving direction and feedback to staff, and have a high level of accountability. Responsibilities: Oversees daily food service operations including staff management and/or customer issue resolution in environments such as dining, retail, and/or catering venues to ensure customer satisfaction and achieve food service goals. This individual identifies work unit needs and contributes to the development of unit processes and procedures. 30% Develops, implements and oversees workflow components, and assigns and coordinates the day-to-day activities of food service staff 20% Selects, develops, implements and schedules logistics and menus for daily and catering operations 20% Leads and provides exceptional customer service, answers questions, and provides information regarding food preparation, catering, and associated activities 10% Assists with unit budget monitoring, management of inventory levels, and staff training 10% Monitors adherence to federal, state, campus, and local food safety regulations, policies, and procedures, identifies needs and makes recommendations for improvement to leadership 10% Oversees dish room Institutional Statement on Diversity: Diversity is a source of strength, creativity, and innovation for UW-Madison.
