As a Culinary lead at Mason Street you will be responsible for ensuring that all duties assigned to culinary staff are properly carried out, ensuring the food is always top-notch! Mason Street Grill in downtown Milwaukee has become a local favorite for delicious steak, hand-crafted cocktails, and jazz music. Whether it\'s the upbeat aromas, the background sounds of live music, or the taste of a refreshing cocktail after a long day at work, we want to make sure that our guests\' time spent with us will bring them back again and again. What you will be doing: Supervise and lead culinary staff, holding pre-shift meetings. Prepare, cook, and present high-quality food promptly, following recipes. Store food correctly, maintaining proper rotation and dating. Ensure cleanliness, sanitation, and personal hygiene before, during, and after service. Manage inventory and requisition food from the storeroom, putting items away properly. Set up and break down stations, completing all necessary prep work. Clean, organize, and lock coolers after use. Other duties as assigned. What we are looking for: Previous cooking experience required, a minimum of 5 years in a similar position preferred, Culinary or Apprenticeship program preferred. Comprehensive knowledge of kitchen equipment, food items, garnishing, stocks, sauces, meat fabrication, fish filleting, and proficiency in saute, grill, fry, and poultry stations. Must be able to work a varied schedule to include days, evenings, weekends, holidays and the ability to work under pressure. Ability to carry out the job functions of the Sous Chef when the chefs are not present. Sufficient manual dexterity of hand in order to use all kitchen equipment, i.e., knives, spoons, spatulas, tongs, slicers, etc. Ability to lift, push, or pull weights up to 100 pounds. Ability to stand for long periods, work in a confined space with high levels of noise and frequent interruptions, and perform duties within extreme temperature ranges. Ability to obtain any local, state or federal license or certification for sanitation, liquor service, or food service certification. What\'s in it for you?
