Hilton Lead Cook - Hudson and Nash Restaurant - Hilton San Diego Bayfront in San Diego, California

The Hilton San Diego Bayfront is looking for their next talented Lead Cook ! The culinary team is looking for someone with at least 5 years of professional cooking experience, 2 years of past supervisory experience in a culinary setting, as well as strong communication and team building skills . This person will need to be adaptable and supportive when helping lead the team. This is the perfect step for someone looking for growth in their culinary career.

A Lead Cook is responsible for overseeing and participating in the preparation of food items in accordance with recipes and established standards in the hotel's continuing effort to deliver outstanding service and financial profitability.

What will I be doing?

1.Preparation of all food and kitchen items for restaurant menus, outlet production special events, etc.

2.Oversee preparation of food in all areas during assigned shift. Ensure that quality, flavor and presentation of product is above standard at all times.

3.Visually check food quality and continuously perform taste tests of product prepared for hotel guests to ensure quality and consistency.

4.Write detailed prep lists and kitchen orders, assign duties to team members, communicate needs of kitchen to team, review and production sheets, coordinate with restaurant management when necessary.

5.Teach, train educate, huddle and conduct one-on-one’s with team members in various ways to ensure that Hilton Values, Mission and goals/direction are being continuously re-enforced and respected.

6.Check and respond to all emails on a daily basis to ensure good flow of communication.

7.Communicate any challenges to Chef/Sous Chef

8.Assists Chef/Sous Chef in providing a safe working environment and overseeing cleanliness, safety and sanitation in all kitchens in all areas.

9.Assist in ensuring that we are Ecosure and QA compliant.

10.Walk all line setups and taste all mise en place to ensure that food is at the highest quality, back-up prep is correct, and touch base with restaurant management/supervisors to ensure guest satisfaction.

Wage for this role is $27.53 an hour
